Gumbo is one of Louisiana’s signature dishes, and Katie does have some family connections to New Orleans, so you know it’s going to be wonderful! This gumbo is mixed with chicken, andouille sausage, and okra! We make a homemade jerk paste, and start the gumbo by making a roux - it cooks for more than an hour! Either jasmine rice or potato salad is classic and scrumptious to mix with the gumbo!
